Merchandise/menu & seasonal: own the seasonal calendar (drops, gifting peaks, café LTOs); curate by store; partner on terms, allocations and rebuys; launch campaigns OTIF.
Systems & continuous improvement: use POS/inventory/rostering/reporting tools to simplify work; map and fix workflow pain points; establish clean daily/weekly/month-end reporting.
0–30 days: site walks, diagnostics, baseline KPIs, stabilise rosters, close compliance gaps.
31–60 days: embed weekly trade & labour routines, reset top COGS/margin levers, standardise café recipes/calibration, lock the seasonal calendar.
