The San Telmo Group is one of Melbourne's premier hospitality Groups, best known for fire-driven cooking and bold, produce-led menus. As our teams expand, we're seeking Restaurant Manager candidates for opportunities within the Group. In the Restaurant Manager role, your day-to-day will involve working in tandem with the Head Chef to oversee the strategic direction of one of our restaurants, through the following responsibilities:
Provide strong leadership to the Assistant Manager to ensure they are overseeing FOH operations, delivering exceptional guest experiences and upholding brand standards.
Manage, develop, and mentor FOH leaders and staff; ensuring a strong restaurant culture, retention, and succession planning.
Drive sales strategies, financial performance, and inventory control to meet business goals for the restaurant.
Oversee the reservations function, including all aspects of guest engagement and VIP relationships to maximise revenue and loyalty.
Ensure compliance with OHS, RSA, and first aid, embedding a proactive safety-first culture.
Represent the FOH team in cross-departmental (i.e. BOH, HR and Marketing) + Director-level communications, proactively contributing ideas to our long-term business strategies.

The ideal candidate will have:
Unrestricted Right to Work in Australia - Citizen or PR candidates preferred, otherwise at least 2+ years left on a temporary visa with full-time work priviliges.
Experience & Background – 3–5 years in premium, high-volume restaurants; with at least 1-2 years in an Assistant Manager or equivalent leadership role.
Skills & Knowledge – Strong in financial management, workforce planning, stock control, compliance (OHS, RSA, first aid), and proficient in POS, reservations, and rostering systems (e.g. Bepoz, SevenRooms, Deputy, Xero etc).
Leadership & Soft Skills – Inspiring leader with excellent communication, conflict resolution & organisational skills; as well as a proactive, strategic mindset.
Attributes – Flexible availability (approx 38-42 per hours week, incl evenings & weekends), professional grooming & presentation, inclusivity and cultural awareness, and a strong passion for hospitality and team development.
