The Role
The Head Sommelier will oversee all aspects of the wine and beverage program, maintaining the cellar while driving innovation and profitability. This role requires a balance of strategic oversight and hands-on service, working closely with the broader food and beverage team to deliver a seamless guest experience.
Key responsibilities include:

• Curating, maintaining, and developing the venue's wine list to reflect its identity and vision
• Managing supplier relationships, purchasing, stock control, and accurate reporting
• Delivering professional, approachable wine service and recommendations to guests
• Training, mentoring, and developing FOH staff in wine knowledge and service standards
• Supporting overall service operations while promoting excellence across the floor

Skills and Experience

• Previous experience as a Sommelier or Beverage Manager in a premium dining environment
• Strong operational knowledge, including ordering, stock management, and supplier relations
• Deep understanding of Australian and international wines with confident food pairing ability
• Proven ability to train, mentor, and inspire a team to deliver high-level service
• Exceptional presentation, communication, and leadership skills
